Whole30 Done And Forward

Well, folks, my Whole30 is complete and what a journey it was. Lots of realizations and things to remember.


That has been the biggest thing this Whole30 journey. Your body is what it is. It isn’t like the body of your best friend or the body you see on the TV screen or your favorite magazine person. You are you and that’s how God made you! Be happy with it but do the best you can for it!

What have I brought back into my diet? Wine……this weekend was wine weekend and it was good but I know what it does to me. Still doing my bacon-eggs for breakfast/brunch with fruits or avocado. Have not brought very much gluten into my diet. Have eaten my On The Border chips and have gone to Mama Citas and had tacos, no cheese, no rice, no beans. Dairy has not  come into the plan very much. I made an omelet yesterday morning and sprinkled a little sharp cheddar on it, no problem, but I have not made a point to eat a chunk of cheese  or eat cheese enchiladas or anything of that nature. Still drinking my coffee with coconut milk and collagen peptides in the morning.

The garden is slowing down, cucumbers have been pulled up and squash is really slow and may get pulled up too before long. Okra is starting to produce, which means tomato-okra gumbo and roasted okra! Luv that stuff! Peppers are going crazy but the tomatoes are all vine and blooms and not so many tomatoes. My egg plant is as tall as I am with blooms and no babies.

Started cleaning project in the office on July 4th and continued this past Saturday. It looks 100% better but I am not there yet……

So, what is for the future? Continue eating the way I am eating, add a little change here and there, continue with my office clean up and then tackle the other room! Sorry, but no recipes this time…nothing has struck me to share that is out of the ordinary..

Half Way There Whole 30 & Count Down Days

This Whole30 time, I have come to grips on some of the issues I am/was having with myself-wine. I had a great weekend with hubs and family camping in the  RV and didn’t have any alcohol and was still able to enjoy myself and have fun and I was very happy. I realized that I don’t need the wine to feel good or be happy. I enjoy food and I have not starved myself at all. Also, it’s not about the pounds & inches, I am realizing that I feel so much better about myself and not waking up each morning in a cloud that takes a while to go away. Yes, the energy is there. I have better stamina while cooking in the evenings and sleep quality is better, provided I can shut my brain off…

Things I have noticed phisically is that my middle rolls are not as rolly, and the clothes test is a bit looser. I did step on the scales-you are not suppose to until the end-and I was happy at what they read to me…..no, I am not telling….that’s next weeks final thing! lololol

June 25, 20 year mile marker for hubs and I. Together for 20 years, married since 2005. We went to Mama Citas. I had bacon-wrapped shrimp w/grilled onions and peppers and a Caesar salad no croutons. Had a small amount of parm and I had maybe the equivalent of 1 chip. Club soda for my drink.

June 26, made muffin cheese cakes for my lodge gig this weekend. Yes, I licked my finger that had some batter on it…could not resist to see how it tasted. It was a keto based recipe using Swerve sweetener, a new one to me, so I had to see what it was doing. Not bad and I am not guilty because it was only a VERY small amount.

June 27, supper tonight will be “Armands Salad”, left over baked tilapia, and veggies. Julie is coming over to talk about a possible house cleaning job and to eat with us. I saved two cheesecake muffins for her. Hubs took two with him to work this morning. I really enjoy making those things but I know that they are not totally good for me because of whatever sugar I use. Trying to stay away from sugar, even though Keto has “snacks/desserts” that has a sugar (Swerve) in them. Crust is almond flour, butter, and nutmeg for a little taste. I found the recipe on Allrecipes. It used Splenda but I used Swerve. The keto books I am reading use this in all of their desserts instead of stevia and other compliant sweeteners. I ordered it from Amazon, you know they have everything….

You ask, “What do I want to eat after Whole30?” Well, I want to go eat tacos! No cheese, with maybe rice but no beans. No wine. Club soda will work.

Will I continue this route, yes for a while until I introduce some things back into my plan. Wine? Maybe on occasion, because I don’t want to go back to feeling so dragged out in the mornings. I am looking at the Keto diet and may implement some of it into the plan too, but not too much dairy.

So, hopefully next week I will let you know how he ending went. I will be at my lodge place in Mt. Home this weekend cooking for a “girls weekend” there. Menu? Italian theme. Pasta Saturday night….one of my weeknesses..BUT I AM STRONG!!!!!!!!

10 Days Of Whole30

Well, 10 days of Whole30 is over. That leaves 20 more days of seeing what they bring to me. I am being positive, and optimistic. I have seen changes, but subtle changes that are not visual to me. #1. I am starting to sleep better. #2 I am not worrying about losing weight, which I am not suppose to be. #3. I know I am doing something to my body that is a good thing.

I am keeping up writing in The Whole30 Day to Day journal that I posted a picture of at the beginning of this. Food is not a problem nor are cravings. Except wanting a glass of wine while sitting on the back porch with hubby. But I have my fuzzy waters that I am drinking. I aim to continue this program and also looking into another program once this one is complete.

Recipes? Well, here is one that is very simple. Slice a cucumber, a green pepper, and a sweet onion in a bowl. Have your compliant ranch dressing made and mix some in the veggies. Chill and serve. I did this for me and hubby tried some with a garden fresh tomato. I knew it was good because I had made this the day before he ate some. He just couldn’t say enuff about it. He loved it. So, if you are hooked on the compliant ranch dressing, do something like that! You can also add other veggies to the mixture, such as raw squash, lightly steamed broccoli & cauliflower, radishes, or whatever you have on hand. I ate this with some tuna and a boiled egg for lunch one day this last week.

The journal has you write down what you ate each day and check off what meal was your favorite. Hands down, it usually is the evening meal. That is hard for me to eat at an early time since there is so much to do around the house. But with food made up and in the fridge, it is easy to pull something out around 7 or 7:30, unless hubby is grilling, then it gets late……I do not sleep well when I eat late and I have bad dreams, too.

Came to the conclusion today while shopping in San Antonio that my favorite shoes I like to wear make my legs and hips hurt after wearing them for a little while. My feet don’t hurt, but everywhere else does…makes me sad….I have 3 pairs of that type of shoe that I wear to work and such…

On a positive note, we are having a RV outing with Hubby’s kids this weekend! We are traveling to Tow, Texas, Texas Hills RV Resort or something like that….this will be our maiden voyage with the travel trailer he bought earlier this year. I am excited for sure! Gonna have me some outside time under the canopy with my books and stitching….meals are planned out, and yes, I will want a glass of wine but I WILL BE STRONG!!!!!!!!

Pre-Days Before June 1, 2018-Whole30 Beginning

May 29th. Picture taken in my favorite go-to clothes for my afternoon job. Pants push the rolls above the waist line, as usual….I sit down and the rolls roll even more. All the more reason to do Whole30. One of the good things about doing this in June is because the garden produce will be coming in strong! Cucumbers, squash, green beans, peppers, and eventually tomatoes and okra. I have okra left in the freezer from 2 years ago that I will be using up in soups. Came to the conclusion that my eating habit during this journey will be a nice breakfast, a larger lunch or the heavier meal and soup for supper rather than a heavy meal. Soups are so good for the soul, inside and out. Thank goodness hubby likes soups too. I made a pot of chicken soup yesterday for this week and it is all Whole30 compliant and it turned out really good! That’s supper for me this week to get me in the groove of lighter suppers. We usually eat late, so that works well for late meals. My goal this week is to go through my office room and make some sense out of the mess it is in…..yesterday was a start but it’s a long way from being finished.

May 30, 2018      Not a great day. Didn’t eat like I should have and all my ambition went down the drain when I got home. Hubby went to a t-ball game and I had the house to myself. I actually ate supper before 6:30 and had my shower before 8:00. Sad part is that I had a hard time going to sleep. My brain was tossing around just like my body was. Should have gotten up and read or write stuff here. Oh well….

May 31, 2018-Pre-Whole30 day:   Not a bad day so far. I am excited but a little apprehensive about tomorrow. I ate a scrambled egg before 8:30 this am and went to spiff up a house I clean. Did some running around and came home.

Made me some what I am going to call my “Wow Juice”.

Wow Juice

Fresh squeezed orange juice (16 ounces) bought at the store, fresh peeled ginger piece (about a good 1 inch piece), fresh peeled turmeric knob(use gloves or your hands will turn yellow!), and ground red pepper(a little over ¼ teaspoon). Blend in Vitamix until all is mixed and no chunks. Pour into glass jar, drink about 2 ounces of it and put in fridge.

I went to my office job and it was slow but I made it through. One of the guys had a birthday today and there was cake, yes, I had a piece. I am tired and draggy from it. Came home and made a broccoli shred salad for bunco tonight and I hope to have left overs because it is compliant! Also drank another shot of “Wow” juice, that woke me up! Yes, I will continue making that, it’s really gooood! Tomorrow’s plan is to take measurements, eat some eggs and veggies and ½ an avocado and have my coffee and vitamins. I will be going into my office job since it is first of the month rental stuff. Wow juice will be my first shot, though! It will wake you up for sure! Whole30 Day 1 posting should happen tomorrow evening.  may not post everyday here, but I will journal and post several days at a time like I did for Pre-Whole30, and have recipes or recipe references form the books they came from.

My Whole30 Journey Journal June 2018

Well, dear daughter, here goes. With your advice, I am going to journal my Whole 30 journey and do my best to put it on my website blog page. This one is my old site because I cannot get into my web page to blog on it…grrr..)

May 28, 2018

My plan is to take a picture of myself Friday morning, which is June 1st and post it with it titles “The Beginning”. Am I scared, no, I am not scared. I have done it before successfully in June 2015? And with success. I am just asking for tons of willpower and support from those who love me and know me. As far as the food goes, I won’t have a problem there. I am cooing for a young man who is eating purty much Whole 30/Paleo, so I am able to work my way through my Whole 30 cookbooks for him and I will know what I will fix for myself and hubby when I fix food for him. What’s going to be the hardest is that dear hubby will continue to have his beer and I cannot have my wine that I like to have in the evenings or on weekends. My replacement that I know will be much better for me is an elixir of un-sweet cranberry & cherry concentrate from the health food store mixed with bubbly water over ice with a splash of AC vinegar. That will be good and healthy for me plus quench my thirst. La Croix waters will be in my fridge too. I won’t be giving up my caffeine. That’s not an issue for me. I like my coffee and my tea, which I will be drinking. The thing I noticed back when I did it the first time was that when I re-introduced dairy, it gave me bad gas and still does. Too much gluten carbs makes me feel real sluggish to (pancakes, biscuits, etc.)

day by day

I have been reading the daily diary book that Melissa Hartwig wrote, (WHOLE30 DAY BY DAY), and I am asking myself again, why am I doing this? Yes it is to lose weight and inches, which was the reason for the first successful 30 days in 2015, but to also get my system back in shape and to find extra energy needed to do the jobs that I do, which are quite physical. I need to feel better about myself and this is what I am aiming for with this Whole30. My plan is to hopefully start walking in the evenings or early in the morning plus ride my bike in the back, low impact exercise plus it will get my heart rate up too. And maybe I can get hubby to set up the tread mill again so I can walk on it. Gotta use it, since I have it! But if anyone out there would like to buy it, please let me know! Hubs wants it out of the house and I don’t want it outside in the weather. If I had a place and money to set up a gym, I would and it would be there along with an elliptical machine plus 2 other machines that work on the back and waist plus one other weight pulling machine. My mini anytime fitness room! I loved going there, but life got busy and I stopped going. So much for dreaming…poof! Back to reality…..Stay tuned in for more info and hopefully pictures.

It’s Been A While…

Yes, it’s been a while since I posted anything on my blog page of my web site. Life gets crazy but if you are following me on FaceBook, you will know what I have been doing!  This year, my plans for the web page is to vamp it up so it does not look so “clunky” as I was told today…but I am getting help with it, thank you Steve O’Brien!

One of my goals is to start cooking things for B&B clients to choose from and have pictures of the items as well. It helps when people want to know what it is you are actually going to be making for them…  Also, the menu page will be set up differently as well.  I am excited that the site will be a much user-friendly place once things get done.

I have a new kitchen in the house now, and I am excited as all get-out and I will be cooking recipes and taking pictures in it as well! Who knows, it may even get photo bombed by the fur kids at times…oh no…..


No, these are not the fur kids but this is my daughter and her wonderful husband and sons who will be visiting me in March! I can hardly wait. They live in Illinois, so far away from YaYa.

Another thing I will be blogging about is my Paleo/Whole30 foods that I cook and eat and experiences with it. Hopefully I will take pictures as well to show you what the good food looks like and recipes as well….yes, I still don’t follow a recipe, unless it is something baked or a new one for a client’s meal cooking.

Hey y’all!

Yes, tis that time of year again. Tis the season to remember the birth of our Lord and Savior, Jesus Christ. Happy birthday! Jesus! And thank you for all that I have received from you this year and in years past. Amen.

It is a crazy time of year for us all, me included. Working at Der Kuchen Laden, plus doing my personal chef work, and trying to make time for family and friends makes my time, and temper sometimes, a bit short or pulled very thin. But with our Lord’s help and understanding, we will get through it all and remember that He is the Reason for The Season.

Not sure what all I will be cooking for our gathering with families yet, so I am just in the waiting game right now for menu items from those who need to decide. Pulled pork, I think, for the Beard gathering on January 1st at my mom & dad’s house. The Duecker kids will be gathering the Sunday before to do our celebration/gifting and I don’t have a menu as of yet.

The hunting lodge Saturday nite menu will be beef shoulder roast with potatoes, carrots, mushrooms, and mushroom gravy; green salad on the side with whatever desserts I come up with. If I remember right, we will be doing Sloppy Joes for lunch.  Saturday breakfast will be breakfast tacos with trimmings; Sunday breakfast will be sausage links, home made biscuits, gravy, and scrambled eggs.  Yes I spoiled them the first time I made breakfast for them because that is what I made then! I am very grateful for this connection in my business.

By the way, how do you like my new page theme??!! I changed it today, playing around with what Word Press has that is free.

Happy Thanksgiving!

Yes, it is time for the feast! We had our family feast this Sunday and yes, over-eating took place, again. But I DID make something that I know I will be making again and again. So, I will share it with you but I don’t have any pictures of it, sorry.

Cream of Celery Sage Gravy for dressing: (oh so easy and oh so VERY good!)

Thinly slice and mince about 1 cup of celery, thinly slice and mince about 1/2 cup yellow onion. In a medium (6-8 cup size) sauce pan, saute veggies in about 1 1/2 TBSP butter and 1 TBSP canola oil until onions are clear and celery is tender.  Add about 1/2 tsp dried Sage powder, 1/2 tsp sea salt, and 1/2 tsp black pepper. Stir to meld flavorings in veggies. Sprinkle in about 2 TBSP unbleached AP flour. Stir into veggies and cook for about 3-5 minutes on medium heat to cook flour.  Add 1 1/2 cans of chicken broth (I used Swanson’s, 99% fat free/no  MSG cans). Stir with whisk to break up lumps and blend all together.  Continue to stir and bring to simmer and add about 1/2 cup half & half, stirring all the while. Bring back to slow simmer and let gravy thicken as much as it can, turning heat to low or medium low. You don’t want to scorch the gravy or have it do a rolling boil because it will make the milk break up and show little curdles in the gravy. When thickened as much as it is going to, take off heat and serve with meal. It may not be extremely thick but it will be like giblet gravy thick because of the amount of flour added to thicken it up. In other words, it may a little runny, but that is ok because it will get absorbed in the dressing on your plate! (it was good topped on my buttered roll)

This gravy took the place of giblet gravy for the dressing I made Sunday because I did not have a can of Cream of Celery soup to use for gravy or giblets to cook up. Who needs that can when you CAN do this?!  It was very good and something I will be doing again for other recipes and for giblet gravy.  It can be made and you could put cooked diced chicken or turkey in it along with green peas and carrots and turned into a pot pie or served on top of some good home made buttermilk biscuits!  Yum! Yum!

Confession time and regroup…

Confession time…..went to the fitness center to work out, first time in over a week…30 minutes on the elliptical with 5 resistance! That was the good part!  The bad part is this….stepped on the scale in the ladies dressing/shower room….disaster….about 4 pounds crept up on me…….that is what I get for not watching what I have been eating and drinking and not exercising on the regular basis I need to be…….

So! It is back on the wagon for me beginning tomorrow! Today is the visit to Becker Vineyards to sample their wines for the Fall project of mine! What am I going to do beginning this next week??? Bring my lunch, cut out breads, boost my protein and veggie intake, go to fitness center like I should, cut beer/wine on back porch (drink my red tea instead)….you would think summer time would be the easiest time to lose weight with all the fresh produce at hand, but it is also the best time of the year for back porch time with hubby and beer & wine goes so well with back porch time…I need to go to a week long health spa/club…anyone want to fund that for me????  LOL……..back to cleaning on the house now…..

Now, how can I create my own health club/spa here at the house??? Gotta think on that one especially since I need to keep hubby Larry happy too and keep it in very reasonable budget!  Looks like another research project…….thoughts and comments welcome on this project…….hugs…Vicky
